We do smoothies for breakfast 2 to 3 times a week. They are fast to make, and if needed the kids can take them in the car on the drive to school if we are running late. They also pack up nicely in a thermos for lunches when the usual options are limited (you can also read that as “we desperately need to do some shopping”). This Cherry Pineapple Smoothie is the current favorite, and is quite yummy, naturally very sweet, and fits in with our Paleo eating lifestyle.

Ingredients for the smoothie include 1/2 of a large pineapple, 3 bananas, roughly 2 cups of frozen cherries, 1 can of full-fat coconut milk, 1/3 can of water (using the empty coconut milk can), and a splash of vanilla extract.

Add the ingredients to a blender, starting with the softest items at the bottom and saving the cherries for last. We use a Vitamix blender and love the power and capacity (2 liters) that it has! You might find that you have to scale back the ingredients to fit your particular blender. Blend until smooth!

Enjoy as is, or topped with fluffy coconut whipped cream for a special treat!
This makes plenty for a family of four (with two active teen boys), and I am thinking it would be wonderful frozen in Popsicle molds or even made into an ice cream.
